You may be thinking, "what on EARTH is zucchini bread?", to which I say, HEAR ME OUT!
My Uncle Ken was a master gardener. I remember him being especially proud when he grew zucchinis the size of a kayak, as he would hold them up with a giant grin and say, "LOOK at this ZUKE!" It brought him so much joy, but the best part for me was when it turned into the homemade bread made by Aunt Carol. I have classic memories of Uncle Ken, and most of them relate to food (except that time he was hiding behind the dead deer body in the garage and scared the &%*t out of me). He took great care to make sure everyone in his orbit was well-fed and well-loved. He left this earth too soon, and this is my tribute to the memories he created for all of us.
Uncle Ken's smells like the comfort of simpler times. A true bakery scent with notes of cinnamon, sugar and nutmeg combine with spicy zucchini to create the most mouth-watering of fall scents.
